Ingredients
  • 4 salmon fillets
  • 1/4 cup balsamic vinegar
  • 2 teaspoons honey
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 red bell pepper (thinly sliced)
  • 1 yellow bell pepper (thinly sliced)
  • 1 zucchini (sliced into rounds)
  • 1 cup cherry tomatoes (halved)

  • salt (to taste)

Instructions
  1. Preheat the oven to 400°F (200°C).

     
  2. Season the salmon fillets with salt and black pepper on both sides.

     
  3. In a small bowl, whisk together balsamic vinegar, honey, and minced garlic to create the glaze.

     
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Place the salmon fillets in the skillet, skin side down, and sear for 2-3 minutes until golden brown.

     
     
  5. Flip the salmon fillets and pour the balsamic glaze over them. Allow the glaze to caramelize for another 2-3 minutes.

     
  6. Transfer the skillet to the preheated oven and bake for 12-15 minutes or until the salmon is cooked to your desired doneness.

     
  7. While the salmon is baking, in a separate pan, sauté the sliced bell peppers, zucchini, and cherry tomatoes in olive oil until tender but still vibrant.

     
  8. Arrange the sautéed vegetables on a serving platter. Place the balsamic-glazed salmon fillets on top of the vegetables.

     
  9. Drizzle any remaining balsamic glaze from the skillet over the salmon and vegetables.
