Ingredients
    1. Lemongrass Chicken:
  • 1 pound chicken thighs (boneless and skinless, cut into chunks)
  • 3 stalks lemongrass (minced)
  • 4 cloves garlic minced
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 2 tablespoons vegetable oil
  • Wooden skewers (soaked in water)
  • 2. Dipping Sauce:
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon sugar
  • 1 red chili (finely chopped)
  • 2 cloves garlic (minced)
  • 3. Accompaniments:
  • Jasmine rice (cooked)
  • Fresh herbs (cilantro, mint, basil)
  • Crushed peanuts
Instructions
  1. 1. Marinate Chicken:

    In a bowl, combine lemongrass, garlic, fish sauce, soy sauce, honey, and vegetable oil. Add chicken chunks, coat evenly, and marinate for at least 2 hours.

    Thread marinated chicken pieces onto soaked wooden skewers.
