Celebrate the triumph of freedom with our "Liberation Delight - Emancipation Éclair," a dessert that sweetens the palate and honors the International Day for the Abolition of Slavery. This delicacy is a symbolic representation of the sweetness found in the pursuit of justice and equality.

 
Ingredients
    For the Choux Pastry:
  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 eggs (large)
  • 1/2 teaspoon salt
  • For the Vanilla Custard Filling:
  • 2 cups whole milk
  • 1 vanilla bean (split and seeds scraped)
  • 4 egg yolks (large)
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • For the Chocolate Ganache:
  • 8 ounces dark chocolate (finely chopped)
  • 1 cup heavy cream
  • edible gold leaf (for garnish)
Instructions
  1. Step 1: Prepare the Choux Pastry

    1- In a saucepan, combine water, butter, and salt. Bring to a boil.

    2- Add flour and stir vigorously until the mixture forms a ball. Remove from heat.

    3- Add eggs one at a time, mixing well after each addition.

    4- Transfer the pastry dough to a piping bag and pipe eclairs onto a baking sheet.

    5- Bake in a preheated oven at 400°F (200°C) for 20 minutes or until golden brown.

     
  2. Step 2: Make the Vanilla Custard Filling

    1- In a saucepan, heat milk and vanilla bean (including seeds) until simmering.

    2- In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.

    3- Slowly pour the hot milk mixture into the egg mixture, whisking constantly.

    4- Return the mixture to the saucepan and cook over medium heat until thickened.

     
  3. Step 3: Prepare the Chocolate Ganache

    1- Place chopped chocolate in a bowl.

    2- Heat cream until just simmering and pour over the chocolate. Let it sit for a minute, then stir until smooth.

     
  4. Step 4: Assemble the Emancipation Éclairs

    1- Cut eclairs in half horizontally.

    2- Fill with vanilla custard.

    3- Dip the top of each eclair into the chocolate ganache.

    4- Garnish with edible gold leaf.
