Description

In celebration of International Day of Persons with Disabilities, we present "Empathy Delight - Inclusion Cupcakes." These cupcakes are more than just a treat; they're a symbol of embracing diversity and fostering inclusivity.

 
Ingredients
    For the Cupcakes:
  • 1 3/4 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup unsalted butter (melted)
  • 2 eggs (large)
  • 1 teaspoon vanilla extract
  • For the Frosting:
  • 1 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • assorted food coloring
  • For Decoration:
  • fondant in various colors
  • edible glitter (for a touch of magic)
Instructions
  1. Step 1: Prepare the Cupcakes

    1- Preheat the oven to 350°F (175°C). Line a cupcake pan with paper liners.

    2- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

    3- In another bowl, whisk together buttermilk, melted butter, eggs, and vanilla extract.

    4- Pour the wet ingredients into the dry ingredients and mix until just combined.

    5- Divide the batter evenly among the cupcake liners. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool.

     
  2. Step 2: Make the Frosting

    1- In a large bowl, beat softened butter until creamy.

    2- Gradually add powdered sugar, alternating with milk, and beat until smooth.

    3- Mix in vanilla extract.

    4- Divide the frosting into separate bowls and tint with different food colors.

     
  3. Step 3: Decorate the Cupcakes

    1- Frost each cupcake with a different colored frosting.

    2- Roll out fondant and cut out diverse shapes to place on top of the cupcakes.

    3- Sprinkle with edible glitter for a magical touch.
