Ingredients
    For the Risotto:
  • 1/2 cup parmesan cheese (grated)
  • 1/4 cup unsalted butter
  • 1/4 teaspoon saffron threads (steeped in warm water)
  • 1 1/2 cup arborio rice
  • 1 cup dry white wine
  • 4 cups vegetable broth
  • 1 onion (medium, finely chopped)
  • garlic (2 cloves, minced)
  • salt (to taste)
  • pepper (to taste)
  • For the Heart Beet Garnish:
  • 1 beetroot (large, peeled and thinly sliced)
  • heart-shaped cookie cutter
Instructions
  1. Step 1: Prepare the Risotto

    1- In a large pan, sauté onions and garlic in butter until translucent.

    2- Add Arborio rice and cook until the grains are well-coated and slightly toasted.

    3- Pour in the white wine, stirring until absorbed. Begin adding warm vegetable broth one ladle at a time, stirring frequently. Continue until the rice is creamy and al dente.

    4- Stir in grated Parmesan cheese and saffron-infused water. Season with salt and pepper.

     
  2. Step 2: Create the Heart Beet Garnish

    1- Use a heart-shaped cookie cutter to cut beet slices into heart shapes.

    2- Garnish each plate of risotto with a heart-shaped beet at the center.
