Ingredients
    For the Risotto:
  • 1 1/2 cup rborio rice
  • 4 cups chicken or vegetable broth
  • 1 cup dry white wine
  • 1 onion (finely chopped)
  • garlic (2 cloves, minced)
  • 1/2 teaspoon saffron threads
  • 1/2 cup Parmesan cheese (grated)
  • 2 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • For the Seared Scallops:
  • 12 large scallops
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • Garnish:
  • Fresh chives (chopped)
  • Edible flowers
Instructions
  1. Step 1: Prepare the Risotto

    1- Add Arborio rice to the pan and toast it for 2-3 minutes until the edges become slightly translucent.

    2- Pour in the white wine and cook until it evaporates.

    3- Infuse the warm broth with saffron threads. Add a ladleful of saffron-infused broth to the rice and stir until absorbed. Continue adding broth gradually, stirring frequently.

    4- Once the rice is al dente, stir in Parmesan cheese. Season with salt and pepper to taste.

     
  2. Step 2: Prepare the Seared Scallops

    1- Pat dry the scallops with paper towels. Season with salt and pepper.

    2- In a skillet, heat butter and olive oil over medium-high heat.

    3- Sear the scallops for 2-3 minutes on each side until golden brown and cooked through.

     
  3. Step 3: Assemble and Garnish

    1- Spoon the saffron risotto onto plates, creating a bed for the scallops.

    2- Arrange seared scallops on top of the risotto.

    3- Garnish with fresh chives and edible flowers for a vibrant finish.
