Description

The "Harmony Harvest Bowl" is a savory and satisfying main dish created in honor of International Animal Rights Day. Ingredients
    1. Quinoa Base:
  • 1 cup quinoa (rinsed)
  • 2 cups water
  • 1 pinch salt
  • 2. Roasted Vegetables:
  • 2 sweet potatoes (diced)
  • 1 pint cherry tomatoes
  • 1 pound Brussels sprouts (halved)
  • 3 beets (peeled and diced)
  • 2 tablespoons olive oil
  • salt (to taste)
  • pepper (to taste)
  • 3. Creamy Tahini Dressing:
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1 tablespoon maple syrup
  • garlic (1 clove, minced)
  • salt (to taste)
  • pepper (to taste)
  • 4. Garnish:
  • Fresh parsley (chopped)
  • Sesame seeds
Instructions
  1. 1. Prepare Quinoa Base:

    1- In a saucepan, combine quinoa, water, and a pinch of salt.

    2- Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed.

    3- Fluff quinoa with a fork.

     
  2. 2. Roast Vegetables:

    1- Preheat the oven to 400°F (200°C).

    2- Toss sweet potatoes, cherry tomatoes, Brussels sprouts, and beets with olive oil, salt, and pepper.

    3- Roast in the preheated oven for 25-30 minutes or until vegetables are tender and slightly caramelized.

     
  3. 3. Make Tahini Dressing:

    In a bowl, whisk together tahini, lemon juice, water, maple syrup, minced garlic, salt, and pepper until smooth.

     
  4. 4. Assemble Harmony Harvest Bowl:

    1- Divide the cooked quinoa among four bowls.

    2- Top with roasted vegetables.

    Drizzle each bowl generously with the creamy tahini dressing.
