Ingredients

  • 12 scallops (large, patted dry)

Instructions
  1. Risotto

    1- Sauté chopped onions in olive oil until translucent.

    2- Add Arborio rice and cook until lightly toasted.

    3- Pour in the white wine and cook until absorbed.

    4- Begin adding warm broth gradually, stirring constantly.

    5- Stir in saffron-infused water and continue adding broth until the rice is creamy.

    6- Stir in grated Parmesan cheese and season with salt and pepper.

     
  2. Scallops:

    1- Season scallops with salt and pepper.

    2- Heat olive oil in a pan and sear scallops until golden on both sides.

     
  3. Assembly:

    1- Spoon risotto onto plates, creating a mound.

    2- Arrange golden-seared scallops on top.

    3- Drizzle with truffle oil and garnish with fresh chives.
