Ingredients
    For the Vegan Fusion Bowl:
  • 2 cups quinoa (cooked)
  • 1 cup black beans (cooked)
  • 1 cup sweet potatoes (cubed and roasted)
  • 1 cup okra (sliced and sautéed)
  • 1 cup julienned carrots (lightly steamed)
  • 1 cup marinated tofu cubes
  • For the Fusion Sauce:
  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon Senegalese spice blend
  • 1 teaspoon Haitian pikliz
Instructions
  1. Step 1: Prepare Ingredients

    Cook quinoa according to package instructions.

    1- Roast sweet potatoes in the oven at 400°F (200°C) until tender.

    2- Sauté okra in a pan with a touch of oil until slightly crispy.

    3- Steam julienned carrots until just tender.

    4- Marinate tofu cubes in your favorite Senegalese-inspired spices.

     
  2. Step 2: Create Fusion Sauce

    In a bowl, whisk together coconut milk, soy sauce, maple syrup, Senegalese spice blend, and Haitian pikliz. Adjust to taste.

     
  3. Step 3: Assemble the Vegan Fusion Bowl

    In individual bowls, layer cooked quinoa, black beans, roasted sweet potatoes, sautéed okra, steamed carrots, and marinated tofu cubes.
