Ingredients
  • 1 pound ground beef
  • 1 large onion (finely chopped)
  • garlic (3 cloves, minced)
  • 2 bell peppers (diced)
  • 1 can tomatoes (diced)
  • 2 cans kidney beans (drained and rinsed)
  • 1 cup corn kernels (fresh or frozen)
  • 3 cups beef or vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • Sour cream (for garnish)

Instructions
  1. Brown the Beef

    1- In a large pot, heat olive oil over medium heat.

    2- Add ground beef and cook until browned. Remove excess fat.

     
  2. Saute Aromatics

    Add chopped onions and minced garlic to the pot. Saute until onions are translucent

     
  3. Spice it Up

    Stir in chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper.

     
  4. Add Vegetables

    Add diced bell peppers and cook for a few minutes until they begin to soften.

     
  5. Build the Base

    1- Pour in diced tomatoes, kidney beans, corn kernels, and beef or vegetable broth.

    2- Bring the mixture to a boil, then reduce heat to simmer.

     
  6. Simmer to Perfection

    Let the chili simmer uncovered for 1 hour, stirring occasionally to allow flavors to meld and the chili to thicken.

     
  7. Adjust Seasoning

    Taste and adjust seasoning as needed. Add more cayenne for extra heat.
