Ingredients
    For the Filling:
  • 1 cup cooked quinoa
  • 1 cup black beans (drained and rinsed)
  • 1 cup colored bell peppers (diced)
  • 1/2 cup shredded carrots
  • 1/4 cup fresh cilantro (chopped)
  • 1 teaspoon ground cumin
  • salt (to taste)
  • pepper (to taste)
  • For the Wrapping:
  • rice paper sheets or collard green leaves
  • For the Dipping Sauce:
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • sesame seeds (for garnish)
Instructions
  1. Step 1: Prepare the Filling

    In a bowl, mix together cooked quinoa, black beans, diced bell peppers, shredded carrots, cilantro, ground cumin, salt, and pepper.

     
  2. Step 2: Assemble the Rolls

    1- Dip a rice paper sheet or collard green leaf in warm water for a few seconds until pliable.

    2- Place a spoonful of the filling onto the center of the rice paper or collard green.

    3- Roll the filling, tucking in the sides, to create a neat roll.

     
  3. Step 3: Make the Dipping Sauce

    1- In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and honey.

    2- Sprinkle sesame seeds on top for garnish.

     
  4. Step 4: Serve with Style

    1- Arrange the rolls on a platter, showcasing the variety of colors and textures.

    2- Place a small bowl of dipping sauce in the center.
