Ingredients
  • 1 cup okra (chopped)
  • garlic (3 cloves, minced)
  • 1 tablespoon ginger (grated)
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • fresh cilantro (for garnish)
  • salt (to taste)
  • pepper (to taste)
Instructions
  1. Step 1: Prepare the Unity Stew

    1- In a large pot, sauté onions, garlic, and ginger until fragrant.

    2- Add okra, plantains, lentils, sweet potato, cherry tomatoes, cumin, paprika, turmeric, and cayenne pepper. Stir to coat in spices.

    3- Pour in vegetable broth and bring the stew to a boil. Reduce heat, cover, and simmer until lentils are tender.

    4- Season with salt and pepper to taste.

     
  2. Step 2: Serve the Unity Stew

    1- Ladle the "Unity Stew" into bowls.

    2- Garnish with fresh cilantro.
