"Climate Crusader Ceviche" is a zesty and sustainable appetizer that pays homage to World Climate Day. This dish features responsibly sourced, ocean-friendly ingredients, bringing the flavors of the sea to your plate while promoting eco-conscious dining.

 
Ingredients
    1. Seafood Mix:
  • 1/2 pound responsibly sourced shrimp (peeled and deveined)
  • 1/2 pound sustainable white fish fillet (diced)
  • 1/4 cup scallops (fresh or frozen, thawed)
  • 1/4 cup calamari rings
  • 2. Fresh Ingredients:
  • 1 cup cherry tomatoes (halved)
  • 1/2 red onion (finely chopped)
  • 1 cucumber (diced)
  • 1 avocado (avocado)
  • Fresh cilantro (chopped)
  • 3. Citrus Marinade:
  • Juice of 4 limes
  • Juice of 2 lemons
  • 2 tablespoons orange juice
  • 2 tablespoons olive oil
  • salt (to taste)
  • pepper (to tate)
  • 4. Garnish:
  • Radish slices
  • Microgreens
Instructions
  1. 1. Prepare the Seafood:

    1- In a bowl, combine shrimp, white fish, scallops, and calamari.

    2- Set aside.

     
  2. 2. Citrus Marinade:

    In a separate bowl, whisk together lime juice, lemon juice, orange juice, olive oil, salt, and pepper.

     
  3. 3. Combine Ingredients:

    1- Pour the citrus marinade over the seafood mix.

    2- Add cherry tomatoes, red onion, cucumber, avocado, and cilantro.

    3- Gently toss until well combined.

     
  4. 4. Marinate:
    • Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld.
     
  5. 5. Garnish and Serve:

    1- Before serving, garnish the ceviche with radish slices and microgreens.
