    Dark Chocolate Mousse
  • 200 grams dark chocolate (chopped)
  • 2/3 cups heavy cream

  • 1 cup cherries (fresh or frozen, pitted and halved)
  • 1/4 cup sugar
  • 2 tablespoons cherry brandy
  • Whipped Cream
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Garnish
  • dark chocolate (gratted)
  • fresh cherries
Instructions
    Prepare the Dark Chocolate Mousse
  1. Melt Chocolate

    In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave. Allow it to cool slightly.

     
  2. Whip Egg Whites

    In a separate bowl, whip the egg whites until stiff peaks form.

     
  3. Prepare Chocolate Base

    In another bowl, whisk together egg yolks and sugar. Slowly pour the melted chocolate into the egg yolk mixture, stirring continuously. Fold in the whipped egg whites.

     
  4. Whip Cream
